Potential Kitchen Disaster of the Day

So I sent mah peeps up to the North Pole to teach that mofo Santa a lesson. Don’t mess with Blue Collar Mamma unless you’re looking for a fight! My neck hurts much less today than it has in last few days. But you fuckers don’t care about Blue Collar. All you care about are your damn recipes. Don’t you? DON’T YOU?!?! :: runs away sobbing ::

Aaaannd we’re back! In case you lovelies didn’t know it, I have a thing for Latino cuisine. It’s yummilicious(it’s a word cuz I SAY it’s a word). Here is one of the not-so-secret secrets to making your Latino dishes more delicioso. Sofrito.

Ingredients: makes about 1 quart
2 medium green peppers, seeds removed
1 red sweet pepper, seeds removed
2 large tomatoes
2 medium onions, peeled
1 head of garlic, peeled
1 bunch cilantro leaves
1/2 bunch parsley leaves

Roughly chop everything. Put it all in a blender or food processor and blend the hell out of it til very well blended. If it’s too thick(ha ha) add a little olive oil while blending, just a tbsp at a time. Sofrito should not be a paste.

Take some of the sofrito and put it into a small glass jar and keep in the fridge for immediate use. Store the rest in the freezer, divided into half cup containers, for future use.

Some people like to put capers or olives in there as well. Go for it. Some recipes call for cooking the ingredients in a little olive oil and vinegar for about 15 minutes before blending. That’s pretty yummy, too. But, as I’ve already established here, I’m really fucking lazy.

“But, BCM, I don’t have a blender! How can I get in on this magical deliciousness?!” Not to worry. You could use a mortar and pestle if you’ve got one. If not, go ghetto style(aka my style)! Chop everything up really finely, throw it all in a bowl with a little olive oil and mash it all together with a potato masher. Put it all in the fridge for about an hour and let all the flavors come together before serving or dividing up into freezable portions.

You can use this in just about any savory dish. Rice, soup, with meats, in a stir fry… seriously, it’s delicious.

The Blue Collar family has a fantastic family member coming to visit this weekend, so I don’t know if I’ll be posting anything. Who knows? I don’t know how long I can stand to be away from you sexy bitches!
