Fridays are this blue collar mamma’s day off from slaving over a hot stove for her family, so I’ll leave you with my recipe for the most awesome grilled cheese sandwich I’ve ever made(so far)
You’ll Need: for 1 sandwich
2 slices of a delicious bread(i like regular old whole wheat)
2 slices of Swiss cheese
1 slice of american cheese, split in half
1-2 slices of genoa salami
1-2 slices of tomato
1-2 fresh basil leaves(must be fresh!)
a few slices of avocado
a little mayo
1- Assemble sandwich. I like to put a slice of cheese on each piece of bread, then put the salami, tomato, basil, and avocado in the center. That way, the cheese sort of melts through and around the other ingredients.
2-Put a little mayo on the OUTSIDE of the assembled sandwich.
3-Melt butter in skillet over medium-high heat. When butter is melted, put sandwich in pan(if you don’t know to do this already, just leave now). Cook until golden brown(about 2 minutes or so) and flip. It’s done when the second side is golden brown and cheesy goodness is dripping onto the skillet.
4- Put sandwich on plate. Grab a beer(I prefer a glass of chilled white wine). Eat, drink, and be content in knowing that all is right with the world at this precise moment in time.
I don’t really like American cheese all that much, but it is great in grilled cheese sandwiches. If you want to use cheddar instead, I’d suggest a mild one because a sharp would probably mess with the flavor of the Swiss. Sopressata is delicious instead of genoa salami, but it’s really expense.
I don’t think I’ll be posting on weekends, as that’s normally family time in the Blue Collar household. But if I find time, I will.
